Most missions in Eve are beatable if you fit right.
And by reading your Tristan fit i would say it was the core of your problem.
There are a few rules how to fit a ship, and one of them is: never ever double tank [shield and armor tank at once].
There are a lot of fittings for every ship around the forums, and as i dont know your skills i can just try with some basic setup:
lowslots:
- small armor rep
- hardener for the specific dmg type the rats deal, maybe a damage controll or a armor plate
medslots:
-stasis webifier, afterburner,cap rechargers as you can fit and see it fit ;)
highslots:
2 railguns, 2 rocket or standart launchers
...something like this it "could" look like. Best way to learn is read setups on the forum and tanking guides to understand the modules.
Browse the forum or ask your friend for a quick list of what npcs do what kind of damage and tank your ship accordingly - it helps a lot.

I "patrolled" about 20 different fields already but found only 4 pirates, 2 of which didn't "drop" anything... Is there any way to find pirates more often without having to go to more dangerous areas?
Well you are pretty safe in everything down to 0.5 to look for belt rats. The lower the sec status the better.

Try "jetcan" mining
That is jettison your ore, it will be in a can next to your ship with enough space for a while. Mind the can only lasts about 1 hour and there are some wannabe pirates that like stealing from those cans.You then can haul the ore in that can with your Iteron later.
